Kothavarangai Vathal Recipe Kothavarangai Vathal

Kothavarangai Vathal is known as Sun dried Cluster Beans in English. This is a common recipe prepared in Chettinad. This is often used in recipes like Mandi or Vathal Mandi and is also directly fried and consumed in Chettinad. This recipe should be prepared in summer only.
Try this nice recipe.

Ingredients:

  • Clusterbeans- 1/2 kg
  • Salt- 3 tsp
  • curd- 1 cup

Method:

Trim the edges of cluster beans. Wash it well. Heat 1 litre of water. Add cluster beans and salt in the boiling water. Cook cluster beans 3/4 th. Strain the water. Dry under the sun for two days. Whisk curd well with required salt (we have already put salt while cooking the cluster beans). Add sundried cluster beans. Mix it well. Again dry under the Sun for two to three days. Put it in the glass container and use it for six months.
