South India is famous for its Idly, Vada and Sambar combination and is well known throughout the World. I have even seen some gigantic machine making vadas in some video of foreign country. The foreigners even like vada, I suppose, that is why they have invented machines to make vada. (Click Here to see the Video on Vada Making Machine)
Vada is the deep fried fritters made out of Urad dal or Ulundhu. It is also called as Medhu vadai or Ulundu Vadai. Every Celebration in South India is only with Vada and Payasam. It is a common dish prepared throughout the World. The ideal accompaniment will be Tiffin Sambhar or Coconut Chutney.



Ingredients:
- Urad dhal – 1 cup
- Green chilli – 2
- Pepper – ½ tsp(10)
- Salt – to taste
- Onion big – 1
- Coriander – ½ cup
- Oil – for deep fry



Method:
Soak urad dal for one hour. Grind urad dal, green chilli, pepper and salt in the grinder or mixie to a smooth batter. Don’t add more water while grinding. If you add more water the vadas will be oily. So you sprinkle the water while grinding.
Chop onion and coriander finely. Add onion and coriander to the batter and mix well.
Put one clean plastic sheet on the top of a flat bowl. Take orange size batter and put it on the plastic sheet and press it with the hand dipped in water and make hole in the centre. Heat oil in a frying pan and deep fry the vadas. Fry both the sides well . Serve hot with coconut chutney or sambar.



Note:
If you want crispy vadas you can fry more. I always like soft vadas.
If you want onions you can add otherwise leave it.
If you want You can add curry leaves,grated carrot, finely chopped cabbage Etc …
