Looking to spice up your dosa or idli? Try making this tomato chutney! This delicious side dish is simple to make, and can be stored for more than a month in refrigerator. This recipe is a combination of sweet, sour and spicy flavors, to spice up everything from dosa to idli.

Ingredients:
Before you start, make sure that you have all the below ingredients handy. This recipe requires
Tomato – 500 gm
Garlic – 10 cloves
Curry leaves – A few sprigs
Gingelly oil – 5 Tablespoon
Red Chilli Powder – 2 tsp.
Rock Salt – 1 ½ tsp. or to taste
You will also need to temper:
Mustard – ½ tsp.
Urad Dal – ¼ tsp.
Asafoetida – ½ tsp.
Red Chilli – 1 or 2
You will have to Dry roast and grind:
Mustard – ½ tsp.
Fenugreek – ½ tsp.
Method:
Heat oil in a heavy bottom tall pan.
Add mustard, urad dal and asafoetida.
When it splutters add red chilli, curry leaves and crushed garlic.
Sauté for a few minutes.
Then add finely chopped tomatoes and sauté well.
Then add red chilli powder and salt to taste.
Mix well, cover the pan with a lid and let it cook well, till the chutney consistency is reached.
Cook in a low flame often opening and turning it.
Finally add mustard and fenugreek powder and mix well.




Note:
Can be mixed with hot rice and gingelly oil to make Tomato rice.
Serves as a spread for making vegetable sandwiches.
Also can be used as a spread for making Chappathi rolls.
Can be stored in refrigerator and used for more than a month.
Store in a dry glass bottle and use only dry spoons.
