Thandai is a popular cold drink in Rajasthan. It is also known as Sardai. Thandai is cold milk with the flavours of spices and nuts. In Rajasthan they offer Thandai to Lord Shiva during Maha Shivarathiri. It is a festival drink of holy too.
We chose the Holi theme in our group “Shhhh Cooking Secretly Challenge”. In that challenge i paired with another blogger Sharanya Palanisshami. We select two secret ingredients for each other. I gave her Urad dal and amchur powder as her secret ingredient. She gave me milk and spices as my secret ingredients. I made Thandai with that ingredients.

Let us see how to make Thandai


Ingredients:
- Milk – ½ litre
- Sugar – 4 tblsp
- Saffron – ¼ tsp
- Cardamom powder – ¼ tsp
- Pepper Powder – 1/8 tsp
- Pista – 6
- To grind:
- Badam – 15
- Poppy Seeds – ½ tblsp (khus khus)
- Fennel seeds – ½ tblsp


Method:
Boil the milk with sugar. After cooling keep it in the refrigerator. Soak badam, khus khus and fennel seeds in warm water for 30 minutes.
Peel badam. Grind badam, khus khus and fennel seeds to a fine paste in the mixie.
Add this paste to the chilled milk and mix well. Add cardamom powder and pepper powder and stir.
Soak few strands of saffron in the 2 tblsp of hot milk and add this to thandai for colour. Keep this milk in the refrigerator for 3 to 4 hours.
After 3 hours strain the milk and sprinkle saffron and sliced pista and serve.



Note:
You can add rose petals (Panneer rose) and cashew also.
Add sugar according to your taste.
Instead of adding pepper powder and cardamom powder,you can add 10 pepper and two cardamom while grinding.
