Chettinad Pazha Payasam Recipe is a traditional Chettinad dessert recipe that is often made in all Chettinad Marriage feasts. It is very simple to make. There are lots of variations in the recipe.
Chettinad Pazha Payasam is also made common raw rice as well as basmati rice. To make it more tasty and rich basmati rice should be added and more of nuts and condensed milk. This can be also made as a many temples and offered to Gods during festive season recipe and offered to God as Prasatham during prayers.
You can try your own and adjust the ingredients such as basmati rice, nuts, fruits and custard powder according to your taste, and required consistency.
If you make Chettinad Pazha Payasam Recipe in Basmati Rice it will be more rich and sumptuous. If you use Condensed Milk instead of the regular milk, it will taste superb.
Now, let us see the recipe:

Ingredients:
- Basmati Rice – 2 tsp
- Cashew – 4
- Badam – 4
- Milk – ½ liter
- Sugar – 3 tbsp.
- Condensed Milk – 3 tbsp.
- Cardamom Powder – 1/4 tsp
- Custard Powder – 1 tsp
- Apple, Orange, Pomegranate, Mango, Banana – 1/2 cup each
- Badam, Pista, Chironji – 1 tsp each
- Saffron – A few strands
- Vanilla essence – A few drops
Method:
Soak basmati rice, cashew and badam for about an hour. Then grind coarsely and cook rice paste with milk. Stir continuously otherwise it will stick at the vessel bottom. Add sugar , condensed milk, cardamom powder and allow it to boil. Mix custard powder with little water or milk without lumps and add it to the boiling Payasam and mix it well. Allow it to cool. Chop the fruits and add to the payasam when payasam cools down. Add saffron and chopped nuts. Refrigerate and serve chilled.



Note:
You can add the fruits available in that season.
Depending on the required consistency use more or less custard powder and rice.
Add the chopped fruits only when the payasam is cool.
