Kavuni arisi is also known as Black rice or Purple rice. It is a traditional rice variety grown prevalently in South East Asian Countries and used by the Chettinad Citizens as Authentic Chettinad Recipe. The Kavuni Arisi Sweet Recipe is traditionally made as a sweet recipe in almost all Chettinad Marriages. The Black Rice recipe is easy to cook and nice to taste.

- Kavuni arisi – 1 cup
- Jaggery – 1 cup
- Coconut – 1/2 cup
- Ghee – 3 tblsp
- Water – 3 cups
Wash and soak the kavuni arisi in 2 cups of water over night. Don’t waste the soaked water.
Add 3cups of water including soaked water(according to the rice) in the pressure cooker. Then add soaked rice and cover with a lid and pressure cook for two to three whistle.
Then add jaggery and fried coconut in the cooked kavuni arisi and mix well. Then cook till the sugar melts and serve.
If you want you can add sugar.
