Cauliflower soup is seen in all chettinad marriages lunch. Kalpaasi gives nice flavor to this soup. Now cauliflower season has just begun. so try this soup and give your feed backs.
Let us see how to make
- Cauliflower – 10 florets
- Tuvar dal – 2 tblsp
- Turmeric powder – ¼ tsp
- Tomato – 1 big
- Onion -1
- Green chilli – 2
- Coriander – few
- Water – 2 cups
- To temper
- Fennel seed – ¼ tsp
- Kalpaasi – 2 leaves
- Cinnamon – ½ inch
- Oil – 2 tsp
Cook tuvar dal with turmeric powder. Add water and mash it well. Cut onion and green chilli lengthwise. Chop tomato finely. Heat oil in a pan add fennel seed, Kalpaasi and cinnamon. Add green chilli, onion and tomato one by one and sauté for five minutes.
Then add cauliflower and saute few minutes.Finally add dal stock and salt and pressure cook for few seconds.
When the steam subsides open the cooker and boil for few seconds.
Finally add coriander leaf and serve hot.
Dal mashed water is the stock for this soup.
Add water according to your requirement.
Don’t pressure cook more,or else cauliflower will become mushy.
Add 2 bits of kalpaasi. That is enough for making soup for 4.
