Capsicum pulao is a good one pot meal. Serve with any raita or chips. It is good for lunch box menu. I used red, green and yellow capsicum. Let us see the recipe.
Ingredients:
- Basmati rice – 1 cup
- Onion – 1
- Capsicum – 1 cup (all colors)
- Ginger – 1 inch
- Garlic cloves – 4
- Green chilli – 1
- Garam masala – ½ tsp
- Chilli powder – ½ tsp
- Oil – 3 tbl sp
- Cumin seed – 1 tsp
- Bay leaf – 1
- Cinnamon – 1 inch
- Cloves – 1 inch
- Ghee – 2 tsp






Method:
Soak rice 10 to 15 minutes. Heat ghee in the pressure cooker and add cinnamon, clove and rice and stir for a few seconds then add water 2 cups and salt and pressure cook. Chop onion, green, yellow, red capsicum, ginger and green chilli finely. Mince the garlic. Heat oil in the frying pan add cumin and bay leaf. When they crackle add onion, minced garlic, green chilli and ginger one by one and saute till the onion become transparent.






Add green, yellow, red capsicum and stir. (Don’t over cook the capsicum) Add red chilli powder, garam masala and salt (Salt for only vegetables, we can add the salt for rice at the beginning.) Stir well till the raw smell goes. Finally add the cooked rice and mix it well. Serve hot with any raita.
